Ningin no karashiae (Carrot with mustard-miso)

I got fresh carrots with leaves today.

Today I got fresh carrots with leaves 
still on. Carrots leaves have a sweet 
earthy flavor and can be used in a variety of dishes.


Ingredients(serves 3)

2 carrots with leaves(preferably fresh)

2 tbsp (table spoon of)miso paste
1 tbsp sugar
1 tsp(tea spoon of)mustard

INSTRUCTIONS

1. Chop carrots into 1cm pieces.

2. Cut stem of carrot into 1cm pieces.

3. Boil cubed carrots for 3minutes,
add the stems,and boil them for 1 
minute. Just before turning off the gas,add leaves.

4. Mix the miso,sugar and mustard 
with the cooked carrots,stems and 
leaves.
