Peter's recipe




Apricot and Coconut bliss balls:

150g soft dried apricots 
50g unsweetened desiccated coconut
30g almond meal (blended almonds) 
2 tbsp maple syrup
1 tsp vanilla extract 
1 tbsp white chia seeds

Step 1 

Blend (blender or food processor) raw almonds until they turn to a rough flour texture. 

Step 2

Blend Apricots until they are finely chopped. 

Step 3

Blend all of the ingredients together until they combine to form smooth texture. 

Step 4

Roll the mixure into balls(the size of a golf ball). 

Step 5

Roll the balls into desiccated coconut until coated. 

Step 6

Refrigerate for 15 minutes or eat immediately. Enjoy with coffee, tea or by themselves as a snack.
